Maîtres pâtissiers : [charter of the Association of Master Pastrymakers of the Town of Nancy, France], 4 July 1732.

Manuscript charter and twenty statutes of the Associaton of Master Pastrymakers of the Town of Nancy signed at end "Elisabeth, Mere Regente de nos Etats" and endorsed by a State secretarial advisor, dated Lunéville, 4 July 1732. Further endorsed by one "Bernard" confirming the registration of the statutes by the sovereign court of Lorraine, dated 15 July 1732. The charter was introduced to eliminate abuses and bad practice among the loosely associated master pastry makers of Nancy and its suburbs and to formatlize the association. The twenty statutes, submitted for the approval of François, Duke of Lorraine, detail regulations such as elections and meetings of the association, obligatory days off, penalties to be imposed upon bakers producing pastries, as well as confirming the continued rights of the maîtres pâtissiers to deal in beef. Administration details such as subscription rates and the training of apprentices are also included.
